What you need for Fattoush
For the salad
Ah, sweetheart, Fattoush is all about flexibility and joy. There’s no strict rulebook here—just let your creativity flow! What I suggest below is a delightful combination that tantalizes the senses:
– **Lettuce** – Typically, you’ll want crisp cos or romaine, but iceberg can add its own charm too.
– **Radish** – A little bite to awaken your palate.
– **Tomatoes** – Cherry or grape, or chop those luscious large tomatoes for a bold burst of flavor.
– **Cucumber** – A cool, crisp addition to entice your taste buds.
– **Red onion** – For a touch of zing and passion.
– **Mint and parsley** – Oh, the mint brings an irresistible freshness that takes this salad higher!
For the dressing
We want our dressing to be delightfully tangy; that’s how we keep the excitement alive! Here’s where Pomegranate Molasses plays its seductive role—this sweet and tart syrup elevates your dressing to ‘oh là là!’ status.
– **Pomegranate molasses** – This alluring syrup offers a sweet, tangy charm that thickens with a sultry texture. But if you’re feeling spontaneous, just add a little more lemon juice and a dash of honey.
– **Lemon juice** – The zest of life.
– **Sumac** – A lemony spice adding a lovely, exotic twist.
– **Extra virgin olive oil** – Darling, don’t skimp on the good stuff!
– **Garlic** – A little savor that speaks of intimacy.
– **Salt** – To bring it all together.

Recipe Notes:
Storage – Dressed salad is at its best when enjoyed fresh. Make the dressing a day in advance and store it in the fridge. Crispy pita can be prepared ahead of time too, resting in an airtight container for up to 24 hours. Chop your salad ingredients ahead and keep them separate until just before serving; it helps keep the vibrant crunch!
